The Rhythm

A Day at the Retreat

No two days are exactly the same, but most follow a rhythm that quickly feels natural.

The morning begins at your own pace. Breakfast comes first — unhurried and nourishing. The two groups sit at separate tables, each eating according to their own programme, but in the same calm space and the same morning light.

After breakfast, a gentle movement session — outdoors when the weather allows — helps everyone ease into the day.

On some days, Cristina and David lead the group out into the surrounding countryside — to a medieval village, an ancient monastery, the olive groves of Navarra, or along a stretch of the Camino. Some excursions include a simple lunch outdoors. Others return to the palace in time for a relaxed afternoon.

On workshop days, guests gather for one of three sessions held during the week. Ruth leads two of them — one on the foundations of Mediterranean nutrition and the everyday food choices that support long-term wellbeing, and one on the principles behind a fasting-mimicking programme and how it is designed. The third is a conversation with Manuel Román on the olive, its bioactive compounds, and its place at the heart of Mediterranean longevity.

The afternoons are free. Some people read in the garden, others go for a walk, take a nap, or simply enjoy the quiet of the palace.

In the evening, everyone comes back together for dinner. Afterwards, there is a sharing circle — a chance to talk about the day, listen to others, or simply sit and be part of the conversation.

By the end of the day, most people are genuinely tired — in a good way. The walks, the fresh air and eating simply all help. Most guests sleep well here, often better than they do at home.

The retreat runs from Saturday to Saturday (7 nights). Arrival is on Saturday during the day; departure is after breakfast on the final Saturday.
Early departure on Friday is possible, however the price remains the same regardless of departure day.

Cristina Leuza Álvarez is an entrepreneur and the current owner of the unique Palace of Sansol, built in 1702. The palace is a family legacy inherited from her father, a visionary and truly remarkable man who preserved this extraordinary historical heritage for future generations. Inspired by his legacy, Cristina continues to develop a project based on hospitality, well-being and a close connection with nature.

Holding a degree in Business Administration and Management and backed by a strong international career, Cristina has devoted more than twenty years to the creation and management of innovative projects, entrepreneurship and business development. She also holds Master's degrees in Innovation, European Studies and International Trade, qualifications that, together with her experience as a consultant in national and European initiatives, provide her with outstanding organisational skills, strategic vision and a special sensitivity for creating authentic and high-quality experiences for those who visit the palace.

Deeply rooted in her homeland and family traditions, Cristina has extensive knowledge of the history, culture and natural heritage surrounding the palace. Her family has been closely linked to this area for generations, enabling her to offer guests a genuine immersion into the essence of the region, discovering its traditions, landscapes and most emblematic places. In addition, she is fluent in Spanish, English, French and Italian, allowing her to welcome and assist guests from different nationalities with ease and warmth.

In addition to managing the accommodation, Cristina will be responsible for designing and leading cultural, tourist and nature-based experiences in this privileged setting. Guests will enjoy a unique stay that combines history, well-being, nature and authenticity, turning their visit into an opportunity to disconnect, find inspiration and discover some of the most beautiful landscapes in Navarra.

Biologist · Mediterranean Nutrition, Fasting & Longevity

Ruth Stirati is an Italian biologist who has lived in Italy, Germany and Spain, and speaks Italian, German, English and Spanish fluently.

Her life has been shaped by movement: between countries, cultures and the paths of the Camino de Santiago, which she has been walking since 2019.

Her Italian roots and lifelong relationship with Mediterranean cooking are not just a background — they are the foundation of her belief that eating well and eating joyfully can belong together.

After losing her sister to cancer in 2021, Ruth began to explore nutrition with a deeper personal focus: nourishment, balance, inflammation and longevity. Since then, she has continued her training in Mediterranean nutrition and fasting-inspired approaches, with a special interest in healthy ageing and everyday prevention.

This personal journey — from grief to science, and from science to daily practice — is at the heart of everything she brings to the retreat.

At the retreat, Ruth designs and prepares all meals. Both the Mediterranean programme and the optional fasting-mimicking menu are cooked and curated by her with care, simplicity and respect for the body.

She guides guests through the principles of Mediterranean eating and leads gentle morning movement sessions to help begin the day with presence and ease.

Since April, Ruth has also been living at Palacio de Sansol as hospitalera, welcoming pilgrims on the Camino de Santiago together with David.

Yes — black coffee (no milk, no sugar) is permitted and actually supports the fasting state. Caffeine mildly enhances autophagy and provides mental alertness during the transition days. Limit to 1–2 cups before midday to avoid sleep disruption during the protocol.

Light movement is encouraged — gentle walks on the Camino, yoga, slow swimming. Intense exercise is not recommended during Days 2–4 as the body's energy is directed toward cellular renewal, not athletic performance. By Days 5–6 you may feel the urge to move more freely — honour that gently.

We distinguish between discomfort (normal and expected) and genuine illness. Mild headache, fatigue, irritability = normal. Severe dizziness, heart palpitations, extreme weakness = signal to stop. Your guide is with you throughout the retreat and will help you navigate this with care.

Contrary to conventional fasting concerns, the fasting-mimicking programme is specifically designed to preserve muscle. The careful macronutrient balance and caloric threshold keep the body from catabolising muscle tissue. The stem cell activation in Days 3–5 actually supports lean tissue regeneration post-protocol.

The programme is designed for healthy adults up to approximately 70 years of age. It is not suitable for: pregnant or breastfeeding women, people with a history of eating disorders, those on insulin or with Type 1 diabetes, people with serious cardiac, hepatic or renal conditions, anyone with a BMI below 18.5, or those under 18. Medical supervision is recommended for anyone taking regular prescriptions, managing a chronic condition, or undergoing oncology treatment. Research suggests 2–4 cycles per year for healthy individuals seeking longevity benefits. We recommend beginning with one retreat cycle to understand your body's response, then calibrating frequency based on your health goals. More is not always better — benefits compound with proper recovery between cycles.

Consult your physician before the retreat about any prescription medications. Most medications can continue — but some (particularly blood pressure or blood sugar medications) may need dosage adjustment as the protocol produces significant physiological changes. Participant health profiles are reviewed before each retreat.

The protocol is broken by: animal protein (immediately raises IGF-1), added sugars, alcohol, or total calories exceeding the day's threshold. The protocol foods are specifically chosen to remain below the biological "fasting trigger."

Day 6 is a refeeding day — as important as the fast itself. Aim for 20–30g of protein per meal, and avoid added sugars, white flour, ultra-processed foods, and alcohol. Focus on whole foods: legumes, vegetables, eggs, fish, and wholegrains. What you eat in the days after the programme shapes how deeply your body consolidates the benefits — treat it as part of the protocol, not an afterthought.

The Anti-inflammatory Mediterranean Programme

This programme is designed for participants who choose not to follow the Fasting Mimicking Diet during the retreat. While the fasting mimicking diet is a short-term nutritional intervention with specific metabolic goals, the anti-inflammatory Mediterranean diet is a sustainable way of eating that can be maintained for life.

The approach is based on decades of research into healthy ageing and on the traditional eating habits of some of the world's longest-lived populations, including those of Sardinia, Okinawa and Loma Linda. Despite living in different parts of the world, these communities share surprisingly similar dietary patterns: meals built around vegetables, legumes and whole grains, healthy fats from olive oil and nuts, modest amounts of fish, very little sugar and almost no processed food.

During the retreat, we will follow these same principles while enjoying the landscapes, traditions and local products of Navarra.

One of the reasons this way of eating attracts so much scientific interest is its effect on chronic low-grade inflammation. Unlike the inflammation that appears after an injury or infection, this type of inflammation often goes unnoticed. Yet it is increasingly associated with many of the chronic conditions that have become common in modern societies, including cardiovascular disease, type 2 diabetes, obesity and cognitive decline.

Of course, food is not the only factor involved. Stress, sleep, movement and our environment also play an important role. However, what we eat every day remains one of the most powerful influences on our long-term health.

The meals served during the retreat are designed around these principles. You will enjoy abundant seasonal vegetables, legumes as the primary source of protein, whole grains, nuts, seeds and generous amounts of extra virgin olive oil. Fish will be served two or three times during the week, providing valuable omega-3 fatty acids and vitamin B12. Herbs and spices such as rosemary, oregano, parsley, garlic, ginger and turmeric will be used regularly, both for flavour and for their well-known health benefits.
